If you're anything like me, breakfast usually consists of cereal or frozen waffles eaten frantically as we run 10 minutes late to the bus stop or work.  But every once in awhile, I get it together and cook a "real" breakfast.  And when I do, I look for easy, filling recipes like this Hearty Egg Breakfast Casserole. 

This recipe is sooo literally throw everything into a bowl, mix it up, toss it in a dish and it bakes up to breakfast perfection.  It's easily doubled, too, so it's perfect for a large crowd.  This recipe was handed down to me and I've tweaked it a bit over the years to suit my family's tastes.  You can add chopped veggies or other breakfast meats, depending on your preference.  Every time I make it, I get rave reviews...whether it's Christmas morning, Easter brunch or a rare Sunday where we all sleep in!

Hearty Egg Breakfast Casserole
A hearty and delicious breakfast casserole with eggs, potatoes and sausage. Definitely a crowd pleaser!
  • 1 9-oz package Fully Cooked Turkey Sausage Links, sliced thin
  • 1/2 cup Chopped onion
  • 6 Eggs, lightly beaten
  • 4 cups Frozen Shredded Hash Brown Potatoes
  • 2 cups Shredded Cheddar Cheese
  • 1.5 cups 4% Cottage Cheese
  • 1.25 cups Shredded Swiss Cheese
Preheat oven to 350.Combine all ingredients in large bowl. Stir to combine.Transfer to a greased 9x13 baking dish. Bake uncovered for 35-40 minutes or until eggs are set. Let stand 10 minutes before cutting.
