If you're anything like me, breakfast usually consists of cereal or frozen waffles eaten frantically as we run 10 minutes late to the bus stop or work.  But every once in awhile, I get it together and cook a "real" breakfast.  And when I do, I look for easy, filling recipes like this Hearty Egg Breakfast Casserole.

This recipe is sooo easy...you literally throw everything into a bowl, mix it up, toss it in a dish and it bakes up to breakfast perfection.  It's easily doubled, too, so it's perfect for a large crowd.  This recipe was handed down to me and I've tweaked it a bit over the years to suit my family's tastes.  You can add chopped veggies or other breakfast meats, depending on your preference.  Every time I make it, I get rave reviews...whether it's Christmas morning, Easter brunch or a rare Sunday where we all sleep in!

Check it out and let me know what you think.  Do you have a go-to breakfast recipe?  I'd love to hear about it in the comments!  xoxo
