I love chicken salad. On a sandwich, on crackers, just right out of the bowl…it’s one of those things I have a hard time resisting. That said, I’m VERY picky when it comes to my chicken salad. Light on the mayo, heavy on crunchy add-ins and fresh herb flavors. After lots of practice, I think I’ve finally perfected a super easy recipe for this delicious lemon-herb chicken salad.

It starts off with a shredded rotisserie chicken because I promised super easy and it doesn’t get much easier than that! I also mentioned fresh herb flavor is key, so I use both parsley and basil. I swap in freshly diced cucumbers for the celery found in more traditional recipes. And my top-secret ingredient to get a sunny pop of flavor? Meyer lemon zest! Stick with me here…this combo of fresh, herby and bright flavors is the perfect way to lighten up this classic lunchtime fave. And with spring right around the corner, I’ve been putting this in my mealtime rotation every week. It’s a fresh meal I can feel good about…hence the name!

I never measure my ingredients when I make this. So the below “recipe” is more of a guideline…feel free to use more of what you like and less of what you don’t!

Feel-Good Chicken Salad

Ingredients:
  • Shredded Rotisserie Chicken
  • Diced Cucumbers
  • Chopped Fresh Basil
  • Chopped Fresh Parsley
  • 2-3 Tbsp Mayonnaise
  • Chopped Hard-Boiled Eggs
  • Zest of 1 Meyer Lemon
  • Garlic Salt to Taste

Instructions:
  1. Combine shredded chicken, diced cucumbers, chopped eggs and herbs in a large bowl and stir gently.
  2. Add mayonnaise, lemon zest and garlic salt to taste.
  3. Chill and enjoy .
